Sara Gutiérrez is a 3rd-generation coffee producer and Q-Grader based in Buenavista, Quindío, Colombia. This lot comprises coffee grown on two of Sara’s farms; La Helena and El Silencio. Sara is always in pursuit of developing innovative processing methods that yield new and delicious flavour profiles. This includes experimenting with fermentation techniques, and “technifying” drying mechanisms and agricultural practices. Sara is also interested in the development of sensory profiles through the shape of coffee beans. One of the things that caught Sara’s attention when acquiring La Helena was that the coffee cherries were slightly larger than average for Castillo variety coffee in the region.
