Wilton Benitez is a coffee producer working in the Piendamó Municipality of Colombia. On one of his farms, Granja El Paraíso 92, Wilton grows over seven different coffee varieities. This particular lot comprises Tabi, a variety of coffee tree that was introduced to Colombia in the early 2000s to combat coffee leaf rust. Tabi is a hybrid coffee variety; it is a cross between Bourbon, Typica, and Hibrido de Timor. Tabi possesses all of the positive cup qualities of Bourbon and Typica, and the high disease resistance of Hibrido de Timor. The farm itself houses innovative infrastructure dedicated to maximising cup quality. For example, there are laboratories dedicated to calculating growth components such as shade and plant nutrients to get the best out of the coffee trees.
