Narrative

Sara Gutierrez produced this lot on El Silencio, one of her farms located in the municipality of Buenavista, in the Quindío department of Colombia. The unique flavour profile of this coffee was achieved through fermentation (how the fruit is removed from the seed) and drying. In this instance, the coffee was fermented in an environment without oxygen for a total of 84 hours. Then, the coffee was placed onto raised beds and dried for a total of 18 days. During this time, the lot was agitated once every hour to ensure uniform and consistent drying. To avoid accelerated drying, the lot was covered with black canvas if the ambient temperature ever exceeded 40° Celsius.
