Narrative

This lot comes from Santa Izabel, a 126-hectare farm owned and operated by Nobletree Coffee Farms in Brazil's South Minas region. This lot was processed using a fermentation described by the producers as the anaerobic natural process. This style of processing usually involves fermenting the coffee in an environment without oxygen; in this instance, the coffee is fermented in sealed bags for a total of 90 hours, then dried on patios under shade for 29 days. The producers at Santa Izabel take a great amount of care and attention to detail when processing this coffee, which becomes evident in the deliciously unique flavours in the cup.
