Narrative

This lot was produced by 36 farmers from Saladoblanco, Huila, Colombia. The coffee was processed slightly differently at each farm, but the overarching theme for this lot is “extended fermentation”. One producer, Fausto Calderon, ferments his coffee cherries for 75 hours with the fruit removed from the seed, then dries the seeds mechanically. Another producer, Yolima Rengifo, collects the cherries, lets them rest for two days, then removes the fruit from the seed and places them into fermentation tanks for 48 hours.
