Sabio Coffee is a vertically integrated operation in Nicaragua, overseeing every stage of production from farm to export. Each lot undergoes a rigorous 12-step quality control process—from selective cherry picking and floating to careful depulping, fermentation, drying, repose, and sorting. During fermentation, pH, temperature, and brix levels are closely monitored to ensure consistency and quality. The coffee is stored in Ecotact bags throughout the repose period to preserve its freshness and integrity, reflecting Sabio’s commitment to producing coffees that express both technical excellence and environmental responsibility.

𝗣𝗿𝗼𝗰𝗲𝘀𝘀𝗶𝗻𝗴: Right after picking, the cherries are floated, depulped and fermented in open tanks for 36 hours. During fermentation the PH is closely monitored along with the mass temperature and brix level. Then it is floated again, washed with clean water and dried on patio for 16 days. Reposed for10 weeks before hulling. Both dry parchment and green coffee are stored in Ecotact bags to preserve its qualities.

Mangrove forests are essential coastal ecosystems. They store four times as much carbon as even tropical rainforest, making them an important tool to mitigate climate change.

The trees are planted by Eden Reforestation Projects.
