180 people are working to produce coffee on La Hammonia, an eco-lodge and farm in Matagalpa, Nicaragua. The estate was established by Eddy and Mausi Kühl in 1974. They focus heavily on sustainability across all areas, from processing livestock manure for bio-gas to using fallen trees as carpentry and using their sawdust as compost. The estate won the SCAA Sustainability Award in 2007 and 2008.
