This Castillo variety coffee was grown and produced by Maria Tereza Paz on her farm, Santa Barbara. The farm is located in the El Tambo Municipality in Colombia’s Cauca Department. Well known for its resistance to coffee leaf rust, Castillo is also known for its excellent cup quality. This variety was developed and released by Cenicafé, the scientific research division of the National Federation of Coffee Growers in Colombia, in 2005. Maria's dedication to producing great coffee was recognized in 2014 when she won 7th place in the Cauca Best Cup Competition.

𝗣𝗿𝗼𝗰𝗲𝘀𝘀𝗶𝗻𝗴: Described by the producer WASHED. This coffee is FERMENTED for 12-36 hours with mucilage later intact. Mucilage layer is removed before DRYING.
