Narrative

Jose Santos Guevera Lopez grows coffee at his 5-hectare farm, known as La Montana, in the Marcala region of Montecillos, Honduras. Here he looks after 16,500 coffee trees, as well as growing corn and beans. Jose processes his own coffee at La Montana; this particular lot is processed using a fermentation style known as "anaerobic fermentation". In this process, coffee cherries are fermented inside sealed tanks for a period of time before they are moved to raised beds for drying. Drying can take up to 2 to 3 weeks.
