Narrative

In the Ibiraci municipality of Minas Gerais, Brazil, Jean Vilhena owns and operates the farm Santa Monica. Here, Jean grows “Red Catuaí 99” variety coffee. Catuaí is a hybrid coffee tree, and is a cross between two varieties known as “Mundo Novo” and “Caturra”. Catuaí was created in 1949, but it wasn’t available in Brazil until 1972. Today, it is widely cultivated across Central and South America. Due to its small stature and shape, Catuaí is very easy to harvest and can be planted at nearly double the density of other varieties. For this lot, the coffee cherries were fermented in airtight bags for 36 hours, which allowed the cherries to develop a unique and complex flavour profile.
