Narrative

Finca Santa Carmela is one farm of a group of 5 run by Sabio Coffee. Arara varietal is known for its large beans., it is a cross between Yellow Catuai and Obata, two yellow cherry varietals.
After picking, the ripe cherries are floated and closed into a stainless-steel bioreactor to ferment for 3 days. The mossto (juices of the fermenting cherries) are recirculated throughout the 3 days. Sabio closely monitor several elements like pH or mass temperature during the fermentation. The coffee is then dried on raised beds for 35 days and reposed for 14 weeks before hulling.

Sabio Coffee is a vertically integrated operation in Nicaragua, overseeing every stage of production from farm to export. Their approach is rooted in research, innovation, and sustainability, combining traditional practices with modern precision. Each lot undergoes a rigorous 12-step quality control process—from selective cherry picking and floating to careful depulping, fermentation, drying, repose, and sorting. During fermentation, pH, temperature, and brix levels are closely monitored to ensure consistency and quality. The coffee is stored in Ecotact bags throughout the repose period to preserve its freshness and integrity, reflecting Sabio’s commitment to producing coffees that express both technical excellence and environmental responsibility.
