Narrative

This lot represents coffee grown on Finca Filadelfia by the Dalton Family. This is the first coffee farm in the entire region of Antigua. Before it became a coffee farm in 1864, Finca Filadelfia was used to harvest Cochineal, an insect from which the natural dye “carmine” is derived. At one time, Cochineal was Guatemala’s largest export. The Daltons turned to coffee production once synthetic dyes became popular during the industrial revolution.

Fermentation: Pulped, then fermented in water for 24-36 hours. Mucilage removed, then fermented in water for a further 24 hours.

Drying: Patio dried for 3 days, then dried mechanically for 3 days.
