Atsabe Subdistrict (Natural)

Pinot Noir / Dark Chocolate / Nutmeg

This coffee was grown in the subdistrict of Atsabe, in the municipality of Ermera, in the country of Timor-Leste. It represents coffee grown by producers who contributed to two washing stations: Malabe and Raimutin. This lot was processed in a way that is sometimes referred to as “natural”. In this instance, that means that once the coffee cherries are picked and sorted by hand, they are left to ferment and dry whole; all of the fruit remains intact and attached to the seed. Once the cherries have dried to the ideal moisture level, they are milled at Railaco Dry Mill. Here, the leftover cherry is not considered waste — it is turned into fertilizer, and redistributed to the producers who contributed coffee to both stations.
