Seb: Hello. Is Seb here from Timely Coffees with a quick update for subscribers. If you're set up for our limited release subscription, the coffee you're going to be receiving is from Rafael Amaya. So you'll see both of these coffees come out in the next few weeks. And it's really interesting for us to be able to have different coffees that are from the same producer, the same farm. But the big difference here is that the actual fermentation technique the producer used was changed to make sure they could bring out the most from their coffee for each individual lot. So Rafael Amaya is a Colombian coffee producer, but he's actually developed more into a fermentation expert, especially in this region. So he's done a lot of trial and error and a lot of experimentation and found really great methods for getting some great fermentation profiles out of his coffee. So the idea is that by having this fermentation profile, we can see that producers are having a bit more influence over the actual quality of the coffee itself, beyond just growing great coffee, which is already super important. But this gives them the ability to make this own profile that with Rafael, for example, Rafael is the only one in the world who will have this certain fermentation recipe. So what we can do here is we can see the different types of fermentation that is being utilised at Origin, and then we can kind of taste the differences and then we can kind of see what we like and what we don't like, and then how fermentation really affects the quality of the cup itself.
Seb: So that's why we got both coffees from Rafael and we're super excited to have these coffees. Rafael's been growing speciality coffee for quite a while, but it's really great to see a little bit more prominence and a little bit more focus on all of the stuff that Rafael is actively doing to improve quality.
