Hi folks. Giorgia here from Timely with a quick update about the feature coffee we've got for subscribers this week. If you're a subscriber, you'll be receiving coffee from Izuba Washing Station from Burundi. So 250 seasonal workers that are local to the area work at Izuba Washing Station. And they collected and picked this coffee from the three surrounding collines. A "colline" is one of the smallest administrative divisions of Burundi. So it's quite a small area from which they collected this coffee. We assign the colour purple to this coffee. So we think that this coffee has got a very sticky, intense quality to it. And one of the reasons this might be is, by the way, that this coffee was fermented. So the coffee was fermented at a Izuba Washing Station and fermentation is a term we use to describe how the fruit is removed from the seed, but that can also impart flavour. So in this case the coffee was fermented underwater in hermetically sealed tanks and it was fermented for a period of 48 to 72 hours. So this extended fermentation can sometimes mean that certain qualities or characteristics are brought out of the coffee that tend to be sticky and sort of sweet and fruity and sometimes funky. So if we have a look on the tasting notes here, we've got passion fruit and sponge cake. So that's a pretty intense sort of flavour profile for this coffee.
