This lot is de-pulped, then fermented in anaerobic tanks with the mucilage layer still attached. Autochthonous yeast is added to the tanks to enhance & highlight certain flavours in the coffee. After 5 days, the coffee is removed from the tanks and dried on patios for 9 days. It then spends 30 hours in the mechanical dryers, with a total processing time of 20 days.
