“ET57” refers to a coffee variety that was brought to Costa Rica from Ethiopia by The Tropical Agricultural Research and Higher Education Center (CATIE). CATIE is a regional centre in Costa Rica dedicated to research & education in agriculture. There are several “ET” lines that are being experimented with on Volcán Azul in hopes of achieving the best flavour profile in the cup.
