Jesus Javier has been producing coffee for more than 30 years on a farm he inherited from his father, El Guayabal (named after the Guayaba trees that were originally planted on the plot). Jesus produced his first lot of specialty coffee in 2020. Being so new to the specialty industry, he outsources his processing to an organisation called Victoria Marini.
Fermented in tanks with one-way valves for 6 days, then dried on raised beds for 30 days.
